In the middle of summer in Texas, I avoid using any heating methods for food as much as I possibly can. If there has to be heat involved, I try to make it the grill so we don’t heat up the house any more than it already is, thanks to the blazing sun outside. We eat a lot of salads since they’re cold and crisp and perfect for a back porch supper. A cucumber watermelon salad is one of my absolute favorite side dishes during the summer heat. Watermelon and cucumbers are sort of the ultimate cool, crisp ingredient for this type of salad. Plus, they’re inexpensive this time of year which is always a nice break for the family grocery budget.
The dressing for this salad consists of honey (which comes with some allergy preventative perks), lime juice, and lime essential oil. The lime juice gives you the tang you want to balance out the sweetness of the honey, while the lime essential oil gives an extra kick of lime flavor without watering down the dressing. Add in a few julienned leaves of mint for another cooling ingredient and a sprinkle of feta cheese on top and you have a perfectly balanced, slightly creamy, cool side dish this summer!

When trying to avoid heating up the house, my Instant Pot becomes my best friend for a main course. Tacos al Pastor would go beautifully with cucumber watermelon salad and they’re beyond easy! What’s better than a one pot cleanup when you’re done?!
Ingredients
- 1/2 seedless watermelon, cubed
- 1 English cucumber, sliced thinly or spiral-cut
- 5 large leaves mint, julienned
- 1 t sea salt
- 3 T local honey
- 3 T lime juice
- 5 drops Lime essential oil
- Feta cheese, optional (leave off if you need it to be dairy-free)
Instructions
- In a bowl, toss the cucumber, watermelon, and mint together.
- Sprinkle the sea salt over the salad.
- In a small ceramic or glass bowl, stir together the honey, lime juice, and lime essential oil.
- Pour the dressing over the salad and toss.
- Top with Feta cheese if so desired, right before serving.
