Y’all, dip is a gift from God. It just is. It makes absolutely everything better– chips, veggies, crackers, a spoon… Make it a pretty color and healthy and you basically have my dream food. Red has always been my favorite color. I even made my entire kitchen red when we were first married. Roasted red pepper hummus is gorgeous on a table, amazingly flavorful, ridiculously easy to make, and super good for you!
The roasted red peppers give a sweetness to the hummus while maintaining a little of their spiciness. A little lemon juice brightens it up. For more lemon flavor without watering it down, I put a few drops of lemon essential oil in (just make sure that it’s the highest quality you can find– Certified Pure Therapeutic Grade— so that it’s as healthy for your family as the rest of the hummus). Add in a couple of teaspoons of cayenne pepper and it brings it to a whole other level.
I love to use this as a dip with some sliced sweet peppers or cucumbers, pita chips, or even as a spread on a sandwich instead of mayo or another condiment to make my sandwich a little healthier and a LOT more flavorful. Roasted Red Pepper Hummus
Ingredients
1/4 head garlic
2 T olive oil
3 roasted red peppers, drained
2 t cayenne pepper
1 can garbanzo beans, drained and rinsed
3 T tahini
2 T lemon juice (plus 5 d lemon essential oil, optional)
1/2 t salt
2-4 T water
Instructions
- Pre-heat your oven to 350*. Cut the top of the head of the garlic off so the cloves are exposed, set on a piece of foil, and drizzle a teaspoon of olive oil over it. Wrap it up tightly and stick it in the oven for 20-30 minutes, until the garlic is soft and browned.
- Combine the rest of the olive oil, the 1/4 head of garlic (out of its skin), roasted red peppers, garbanzo beans, lemon juice/lemon essential oil, tahini, salt, cayenne pepper, and 2 T of water in a blender.
- Blend until a smooth consistency. Add a little more water at a time if it’s too thick for your taste until it reaches the consistency you prefer.
- Taste and add more cayenne pepper, lemon, or red peppers to your liking.
