soTEXAN Tex-Mex Taco Seasoning

soTEXAN taco seasoningY’all, there’s nothing more Texan than Tex-Mex. Okay, maybe BBQ, but Tex-Mex is a close second! One of my favorite weeknight meals are tacos. They’re quick, easy, and only require one pan to get dirty. How much more “weeknight” does it get than that? The only thing that would make it faster would be having a packet of taco seasoning, but I don’t like all the added salt and preservatives they put in them. Instead, I make my own. I’ve taken my mom’s tried-and-true recipe and made it to our taste, and it. is. GOOD.

Because I make tacos last minute, I like to make a quintuple batch (or more) of the seasoning when I make it, and then just keep it in a tupperware container on my spice shelf. That way, when I get home from picking up Matthew from preschool or running errands, I just grab the hamburger or ground turkey (shh… don’t tell Ryan!) out of the freezer, defrost it, chop up and sauté an onion, add the meat, a tablespoon of minced garlic, and the seasoning, and brown it up. While it’s browning, I’ll chop up tomatoes, lettuce, grate cheese, etc. and warm the shells in the oven. Sometimes, instead of putting the oregano and cumin in, I’ll leave them out and just grab my oils to add to the meat as it cooks. They bring awesome flavor AND benefits, which is always a perk.

Seriously, I don’t think there’s an easier meal than this.The best part is, it’s SO much healthier than using a packet of seasoning or going through the drive-through for tacos AND it’s naturally dairy-free. Less than half an hour and you have a tasty supper that’s toddler- and adult-approved! Per pound of meat:

2 1/2 T chili powder

2 t salt

1 1/2 t paprika

3/4 t garlic powder

1 1/2 teaspoon cumin (or leave this out and sub a drop of cumin essential oil)

1 T oregano (or leave this out and add 2 drops of oregano essential oil)
